I have been getting really tired of the same old dish cominations; protein, vegetable, carb. So I tried something new with two ingredients I had never used before and some left over chicken breast. The two new ingredients were Roman beans and tomatillos.
I cooked the chicken in olive oil with marjoram, parsely, mushrooms, leeks, and roasted garlic. Then I had heard to roast tomatillos then use them so I roasted them and cut them up and threw them in as well. Then mixed in the beans.
It was alright. A very hearty filling meal. The beans were a good change of pace but the tomatillos had no right being there. I had no idea what to expect from the tomatillos. I was expecting a more green tomatoe peppery taste. Rather they are more lemony and added an acidy taste to the dish that I just ate through quickly so I could enjoy the rest of it.
