At the butcher shops on Arthur Ave you see some strange things. The other day it was a tray full of pig noses. Being the odd ball foodie that I am of course I bought a snout!
I chopped it up and simmered it for about three hours. Then roasted it to get it a little brown. It was super gelatinous, a texture almost like jello. Very strange.
I tossed it in with pancetta, prosciutto, onion, garlic, parsley, and canned tomatoes. Then tossed it all with angel hair pasta and marinated mozzarella.
The snout didn’t have much flavor to it so just added a texture to the pasta mix that wasn’t to appetizing. Will need to try this one again. Plus it was fun.
