I love me some oily fish so when I saw local sardines at the fish market the other day I had to have them. I had broiled sardines in the past and it worked but I wanted to marinate them this time, plus they looked extremely fresh. So I got out my knife and started filleting.
This turned out to be a challenge. Sardines are tiny fish and I have not been butchering fish long enough to have a good enough hand to fillet them perfectly. But in the end I had a dozen pinkish sardine fillets.
I marinated them over night in olive oil, lemon juice, salt, pepper, red onion, and capers. In the end they are nice a white. Put them on some sliced Italian bread.
They were amazing! Oily, salty, and fishy, but very fresh tasting. Everything I wanted. I will definitely be doing them again.
