One of my favorite ingredients hit the fish markets last week, but this time with an awesome addition. I am talking about whole fresh shrimp. Those headless frozen guys are horrible but get fresh whole shrimp and you are in for an awesome treat. These ones were extreme special because they all were carrying eggs. Some yummy little shrimp babies.
I simply cooked them in clarified butter with pancetta, parsley, and a little onion. Then tossed them into fresh pasta. Delicious yet dangerous. Shrimp have very sharp heads and sucking out the insides can be dangerous. I caught a spike in the lip cutting it. But worth the pain. Then the eggs. Oh my God! So good. Next time I see these sexy pregnant ladies at the market again they’re dinner.
