Rarely do I follow a recipe but this one sounded too good. I did add my own touch though. It was for skate with a brown butter, honey, and caper sauce. Would have thought of brown butter and capers but not honey with seafood so I went with it. Added leeks though, one because I had then and needed something green, but also that they go with fish and I figured they’d work here. It was mind blowing. The honey made it just sweet enough and the capers and brown butter added the right amount of salt and savory. I was scrapping up the last bits of sauce from bottom of my plate. Also had rice cooked in the fumet I made earlier of fish bones I had been saving. One of the best dishes I have made in a while.
