I look at Chris Cosentino’s tweets everyday to catch the culinary creations he posts. Usually wild concoctions with offal I cannot get my hands on or know how to use I just look in awe. But last week I saw one that I could do! It was clams with guanciale and lemon verbena. I have a lemon verbena plant in my apartment and guanciale in my fridge. So once I had time I went down to the fish market and bough clams.
I sautéed the guanciale in a tiny bit of olive oil until just starting to brown. Then in my own strike of genius deglazed the pan with a splash of Madeira wine before adding my clams, a small amount of water, and the lemon verbena and steaming it. Finally throwing it over linguine.
Oh-my-fucking-God! It was mind blowing. Salty, briny, sweet, and everything I love in food. Thanks Chris for the idea. Will be making this many times over.
