For homecoming weekend a friend who graduated two years ago was supposed to come stay over so I planned a fancy dinner. Well he bailed so I just cooked it for myself, his lose.
I took a pork roast and covered it with a mustard I made from ground mustard, apple cider vinegar, and honey. Then covered that with homemade Italian bread crumbs. Seared it in a pan then roasted it until just a little pink on the inside.
Below that I put chopped and sautéed spinach with garlic. Then I made mashed potatoes to which I added reduced balsamic vinegar and just a dash of whiskey.
It was really good. Was just missing a sauce to make it more moist.
