For weeks now I have noticed quail in the meat markets. Yesterday I finally bought some. Six came in a pack, and tonight I cooked only four so I threw the other two in the freezer. I’ll do something crazy with those once I go home.
Not knowing what to have with quail I bounced around the internet looking for some ideas. I know I have had quail in the past but wasn’t sure what it would taste like. So I came up with the idea of stuffing them with bread crumbs, mushrooms, scallions, and garlic then baking them. A pretty simple preparation but I did truss for my first time. Check out how pretty they look.
Then to go with them I went kinda crazy. I had squid ink pasta left over so I obviously had to use that up. By the way, the squid ink pasta in probably the best pasta I have ever had. The texture of it is perfect. It does not even need butter or sauce, it can be eaten completely alone. But to round out the dish I needed a veggie. I had picked up beets at the market yesterday and had some purple carrots laying around, and I love color in dishes and what has better color then those two, so they made it into the dish. I boiled them then sautéed them in butter. Delicious.
The whole thing was mind blowing. Only problem was quail are a bitch to eat. They are just to damn tiny to cut up so you just gotta dig in like a caveman. I already use my hands usually half way through a meal, I am not good around polite company, but even I felt savage eating this meal. Who cares, utensils just slow me down, and I am in my apartment alone where no one can judge me, expect for you guys who are now reading this.
