In Ireland, out of necessity, I learned to break down a chicken. It was much cheaper to buy a whole bird then buy the individual pieces. The first time I did it I had a dull knife and no idea what I was doing. But now through practice, better knives, and some research I can break down a chicken with ease now. So today I decided to time myself.

Now here’s the same bird 2 minutes and 27 seconds later.
And the thing is I was rushed taking off the legs and missed the joint slowing down my time. I think I could easy make it under 2 minutes.
