After hearing of menudo last year I have wanted to make it. How could I not? A breakfast soup made with tripe and feet that claims to be the world’s greatest hangover cure! For Spring Weekend it was exactly what I needed.
So I found a handful of recipes online and combined what I liked from each of them to make my menudo. Made it a few days ago and just stored it in the fridge until this weekend. It was so gelatinous cooled I was blown away. Looked like the devil’s jello. But once reheated it turned into a delicious spicy broth. The tripe though did have a texture that is not for everyone, especially in the morning while curing a hangover. Topped with scallions, cilantro, and lime juice it was exactly what I needed to revive myself. Plus of few cups of coffee of course.
Think next time I’ll make a bigger batch and freeze it in small containers. An invaluable college resource.
