Well it is not like I followed the Lenten rule anyway but it did give me a good excuse to go to the fish market. Like I needed an excuse anyway. Since I was home Easter break I was forced by a bolded note left on the counter to not eat meat today and go buy fish for dinner. Since I love nothing else more than cooking and grocery shopping I gladly went and bought fish to dinner. Since my family can be picky, one sister didn’t even eat the fish and had a frigging salad, I went with sole. Then I noticed some little neck clams for cheap and had to have them for lunch, obviously.
As soon as I got home I made lunch. Keeping it simple I wanted the ingredients to talk. So I clarified some butter, some as in half a stick, and let is slowly marinate on low with sage and garlic. Then I turned up the heat slightly and put in clams directly into the pan. They slowly began to pop open releasing their wonderful juices and making their own sauce in the butter. I then tossed them with pasta and toasted slices of a baguette with olive oil and black pepper for dipping.
To. Die. For.
Then came dinner. Sole stuffed with crab meat with a lemon-butter-white wine sauce, spaghetti squash, and sautéed vegetable medley. Not as amazing. But still pretty good. The crab meat stuffing needed something and I am mad I didn’t put any of the fresh ricotta cheese into it, would have taken it from good to amazing.
It was a pretty and colorful plate though.
